DHIAFEE Program
Warm and Welcoming Lodgings in Lebanon
Food and Drink

FoodThe Lebanese people love their country, and they really love their food and drink. You haven’t experienced Lebanon if you haven’t enjoyed a long lunch at a table filled with Lebanese mezze. A good mezze can have up to 30 or 40 small dishes, including fresh tabboule (a salad of parsley and wheat germ), hommos (a puree of hummus and sesame paste), babaganouj (from roasted eggplant, lemon, and garlic), and kibbe nayeh (fresh minced lamb pounded with ground wheat and served raw). Mezze is always followed by the main course, be it grilled shish taouq (marinated chicken) or fresh fish. Taste the delicious home cooked dishes like mujaddara (lentils), and a wide variety of vegetables (okra, green beans, or spinach) cooked in savory tomato sauces served over rice.

Lebanese cooks, be they moms or professional chefs, insist on fresh organic ingredients from the local community – and insist you don’t stop eating until you’re completely stuffed. And with all due respect to our European friends, we prefer our wines from the Bekaa Valley, or our arak from the mountains.
